Baked potato skins with brie & truffle #christmas

Use up residue joint potatoes on Envelopment Day and change sumptuousness potato skins with cheese and vegetable. The latter is nonobligatory, but Noel is a time to consume.


Ingredients

  • 5 biggish jacket potatoes
  • baked, cooled and cut into wedges, or 10 wide criticism potatoes from Xmas Day, cut in half
  • 50g butter
  • thawed
  • 150g overripe brie, diced
  • 3 tsp picked thyme leaves
  • splash of candy oil, to spend (optional)
  • invigorated earthnut
  • shavings (accessible from Waitrose), to work (optional)

Method

  1. Turn oven to 180C/160C fan/gas 6. Put the potatoes in a titanic roasting tin and rainfall with the unfrozen butter. Cut for 30 mins or until they start to snappy up and prettify gilded university.
  2. Sprinkle the cheese and thyme over the wedges and regaining to the oven for added 15 mins until molten and agitated. Withdraw the cheesy potatoes from the oven, splash with veggie oil and completion the containerful with loads of grated vegetable, if you can get your guardianship on some.
