Ingredients:

  • 3 eggs
  • 1/2 cup (120ml) of fat free cottage cheese

Instructions:

  • Heat waffle iron (I used the medium heat) 
  • Add eggs and cottage cheese to a blender and blend till smooth.
  • Mix in the peppers and onion and season well with salt and black pepper
  • Spray waffle iron with spray oil (make sure you spray both sides)
  • Pour mixture evenly onto waffle iron, spooning the peppers and onion evenly on each waffle. Don't be tempted to overfill with egg mixture as it puffs up as it cooks. 
  • Close waffle iron and let it cook for approx 4-5 minutes. Don't try and open iron too soon, or you will result in a mess. The key is to let it doe it's thing.
  • Enjoy as is with a salad or sides of your choice or add toppings as I have done. (see notes)

  • Additional toppings:
  • Chopped tomatoes
  • Little cheddar (part of HEa)
  • Chopped Coriander
  • 45g of avocado mashed - 3.5 syns
  • Greek yoghurt mixed with lemon juice and salt
