INGREDIENTS:
- 6 small Chicken Thighs - any visible fat removed
- 3 cloves of garlic, crushed and chopped
- 1 teaspoon of freshly grated ginger
- 1 large onion, finely sliced
- 1.5 cups (360 ml) of chicken stock
- 2 teaspoons of ground coriander
- 2 teaspoons of cumin
- 2 teaspoonS of chilli powder
- 1 teaspoon of turmeric
- the juice and zest of half a lemon
- spray oil
- Some fresh chopped coriander
- few slices of fresh lemon to garnish
METHOD:
- Add the chicken thighs, garlic, ginger, onion and spices to a large dish and mix well to evenly coat.
- Spray a frying pan over a medium high heat with spray oil
- Add the chicken mixture and fry until lightly browned.
- Add the chicken stock and lemon juice and zest to the pan. Bring up heat till it starts bubbling and then reduce to a simmer until sauce reduced down and thickens. (approx 30 mins)
- Top with fresh lemon slices and chopped coriander.
- Serve with your choice of sides
NOTES:
- This recipe is freezer friendly
- Slow Cooker - cook for 6 hours on low
