INGREDIENTS:
- 2 eggs, beaten
- 1 uncooked sausage - 0.5 syns (syns can vary)

METHOD:
- Remove the skin from the sausage, and break up the sausage into small pieces
- Add the sweet potato, onion, and sausage to a mug
- Add the paprika and a little salt and pepper
- Spray with spray oil and mix to coat.
- Place the mug in the microwave with a plate over the top and microwave on high for 2 mins
- Remove and stir
- Add in the whisked eggs
- Place back in the microwave (not plate this time)
- Cook for 1 min high, and then check if egg is done, add 30 secs in two intervals if needed.
- Topped with chopped tomato and avocado if using
- Season with salt and black pepper
