Ingredients:
  • olive oil
  • 6 Pork Loin Chops
  • 1 medium sweet onion sliced
  • 1 medium shallot sliced
  • 1/2 cup white wine
  • 1 14oz can tomatoes
  • 3 tbsp capers
  • zest of one medium lemon
  • salt and pepper
  • 1 tbsp butter
  • 1/2 tsp crushed fennel seeds
  • 2 tbsp freshly chopped parsley
Instructions:
  • Season the chops with salt and pepper. In an enameled cast iron braising pan, over medium heat, add in 2 tsp olive oil and sear the pork chops about 3 minutes per side.
  • Remove the chops and set them aside.
  • In the same pan,  add in another 2 tsp of oil, then add the onion and shallot. Cook for 4 minutes or until soft.
  • Add in the white wine to deglaze the pan. To do this, let it come to a simmer, and with a wooden spoon, scrape off the brown bits off the bottom of the pan and let the wine reduce by about half.
  • Add in the butter, tomatoes, parsley, fennel, and capers. Stir to combine.
  • Nestle the pork chops in the sauce, and top with the zest of the lemon. 
  • Simmer on low heat for 15 minutes or until the pork is cooked through. Season to taste! enjoy!
