INGREDIENTS:
  • 450g (1lb) of stir fry beef strips

  • 2 tablespoon of soy sauce (not dark)

METHOD:
  • In a bowl, whisk together the sweet chilli sauce, soy sauce, tomato paste and water.
  • Set aside
  • Add the beef strips to a bowl with the tapioca starch and toss to coat
  • Heat a wok over a medium high heat and let it get hot before adding 1 tsp of the oil.
  • Add half the beef strips, and fry till lightly golden, giving it a light toss occasionally.
  • Remove from pan.
  • Add the other tsp of oil and repeat with the remaining beef strips. Removing from the pan to start the sauce.
  • Add the sauce ingredients to the pan and heat on medium high till sauce starts to thicken
  • Lower heat a little, once sauce thickens.
  • Add back the beef and lightly shake the pan to coat the beef in the sauce.
  • Top with sliced spring onion.
  • Serve with your choice of sides
