  • Bring thinly sliced sirloin to room temperature. Set aside as you prepare the marinade.

  • In a bowl, combine the 2 soy sauces, calamansi, pepper and olive oil and stir to combine. I like to mix all my marinades in a separate bowl before adding it to any meat mixture.

  • Using a mortar and pestle, pound 7 cloves of garlic. I added a little rock salt to help pulverize it.

  • Add garlic to the Soy marinade.

  • Pour marinade over beef and mix well. I marinated this for about 2 hours.

  • Slice onions into rings and pan fry until golden. Set aside

  • Heat olive oil in a pan and add onions. I seasoned them lightly with salt and pepper. Keep the flame on low heat and allow to caramelize. Set aside.

  • Pan fry beef in olive oil until browned making sure not to overcook your meat so it doesn’t get tough.

  • Place the leftover marinade into the pan and add 1/4 to 1/2 cup water. Swirl the pan and adjust seasoning. Pour over cooked beef and top with caramelized onions. Serve.
