INGREDIENTS:

  • 12 Chicken Drumsticks (skin removed)
  • for the glaze:
  • 3 tablespoons of maple syrup (6 syns)
  • ⅓ cup of soy sauce (or tamari/coconut aminos)
  • ⅓ cup of passata
  • 1 tbsp rice vinegar
  • salt and black pepper to season
  • spray oil

METHOD:

  • Preheat the oven to 220c or 425f
  • Combine the glaze ingredients in a bowl
  • Place the chicken drumsticks in an oven proof dish and season with salt and black pepper
  • Pour in the glaze
  • Then spray over the top with spray oil.
  • Bake in the oven until chicken is cooked through (approx 45 mins), taking out at several intervals to baste in sauce. So they get a lovely coating of the glaze.
  • Sprinkle with fresh chopped Italian parsley
  • Serve with your choice of sides.
